Cold soups are delicious. These are Not only for summer, But these will be very easy to make,are often filled with fresh fruits and vegetables , are low in calories, and are packed with nutritional Values.

  1. Recipe: Beetroot and orange:

Recipe of Beetroot and orange for 4 people made in 1 hour

Ingredients:

  • Beets: 800 g (fresh young)
  • Onions: 1 unit.
  • Coriander: 2 tbsp. (minced)
  • Broth: 1 (1.2 l vegetable or poultry)
  • Oranges: 2 pieces (Large)
  • Salt: 1 pinch (to taste)
  • Black pepper: 1 pinch (to taste)
  • Olive oil: 2 tbsp.
  • Blue mold cheese: 120 g
  • Baton: 1 hr.

How To Do:

  • Wash the beets then peel, and again wash them to chop finely.
  • Peel onion and cut into slices.
  • Scrub Orangesunder running water.
  • From one drained fruit peel, squeeze the juice.
  • Heat the pot and addfew tablespoons of olive oil.
  • Add the chopped onions and gently cook until they turn golden brown.
  • Add the coriander and stir and sauté for about 3 minutes.
  • Stir in chopped beets, pour the broth and stir.
  • While its boiling, cover the pot; simmer the soup for about 20 minutes.

  1. Recipe: Spanish tomato soup:

Ingredients:

  • Tomatoes: 700 g (or 8 pcs.)
  • Onions: 200 g (or 2 pcs.)
  • Cucumbers : 100 g
  • Garlic : 3 slices
  • Vinegar : 2 tbsp
  • Olive oil : 4 tbsp
  • Pepper : 1 tsp (white to taste)
  • Salt : 1 tsp (to taste)
  • Bread: 4 pcs. (Toast 4 slices sandwich bread)
  • Oil : 2 tbsp

How To Do:

  • Peel Cucumber, tomato and cut into small pieces.
  • Two tomatoes cut into cubes and the rest into larger pieces.
  • Chop onions, crush garlic with salt.
  • Coarsely chopped tomatoes and onions, stir the mixture until it becomes homogeneous.
  • Then put the garlic, pour the vinegar, add 3 cups of cold water and little oil.
  • Mix well and place it in the refrigerator for 2 hours.
  • Preparation of the toast: cut bread into cubes, add to pan, sprinkle with oil for 15-20 minutes. Bake in 180 ° C oven for warmth.

    • Cucumbers : 1 unit (A few slices)
    • Radishes : 4 unit (A few radish)

    • Spicy greens : 1 tsp(crushed to taste)

How To Do:

  • In the stirring bowl pour the yogurt, buttermilk, add garlic, buttermilk, celery, peeled (pitted) and avocado,
  • Add a pinch of salt, pepper, herbs and shake it.
  • Keep in the refrigerator for at least for few hours.
  • Cut the cucumbers into cubes and slice radishes.

  • Lemons : 1 pc (Juice)

How To Do:

  • Immerse the tomatoes for few minutes in boiling water, then peel off the skin.
  • Peel onion and garlic then chop them finely (a tablespoon put off – later sprinkled soup).
  • Put the tomatoes, onions, garlic and crush everything well.
  • Push the lemon juice; add sugar, pepper and salt.
  • Pour tomato juice and whisk everything together.
  • Then cut peppers into cubes.Pour into soup bowls, add a few ice cubes and season with pepper and onion and garlic mixture.

Ingredients:

  • Yogurt: 4 g (natural)
  • Cucumbers: 2 pcs. (Large)
  • Ginger : 1 unit (A piece of fresh)
  • Spring onions : 1 handful (bundle)
  • Dill : 1 handful (bundle)
  • Pepper : 1 pinch (white ground)
  • Lemons: 1 pcs. (Freckle juice)
  • Salt : 1 pinch (to taste)

How To Do:

  • Wash cucumbers, peel and cut into thin strips. Sprinkle with salt and let stand.
  • Washed and dried dill and chopped green onions, garlic, peel and crush.
  • In a deep bowl pour the yogurt, to taste add the ground white pepper, pour the lemon juice and shake.
  • Clean the ginger and grate into thin strips. Mix with cucumber, dill and mashed garlic. The resulting mass in yogurt and shake.

How To Do:

  • Hard boil eggs, cool and peel. Cut into pieces.
  • The cucumbers cut into small pieces symmetrical. Chop the dill and green onions.
  • Drain the liquid from the beets them in a large bowl.
  • Add the chopped cucumbers, herbs, pour on top of kefir.

How To Do:

  • Cut bacon into cubes to fry with oil.
  • Peel tomatoes, cucumbers and chop.
  • Remove the sweet pepper seeds.
  • All products and fried baguette cubes chopped until smooth.
  • Place in an earthen jar, cover tightly and place in the refrigerator for a couple of hours to mix flavours.
  • Enjoy your meal.

Ingredients:

  • Yogurt : 500 ml (homemade or purchased natural)
  • Buttermilk : 350 ml
  • Cucumbers: 2 pcs. (Small)
  • Tomatoes: 1 pcs. (Large)
  • Peppers : 60 g (half red sweet pepper, cleaned)
  • Black pepper : 1 pinch
  • Salt : 1 tsp
  • Spicy greens: 1 pcs. (Bunch dill, parsley, celery leaves, coriander)

How To Do:

  • Wash cucumbers, peppers and tomatoes and cut into tiny cubes.
  • Wash Spicy greens and finely chop them.
  • In a bowl, whisk together yogurt, buttermilk and water, with salt and season with ground black pepper.
  • Add the chopped vegetables and culinary herbs, stir. Serve with rye bread or with hot potatoes.(9)

Ingredients:

  • Dill: 80 g
  • Eggs: 2 units.
  • Tomatoes: 4 units.
  • Salt: 1 pinch
  • Pepper: 1 pinch
  • Olive oil: 2 tbsp.
  • Peppers: 4 units.
  • Garlic: 2 slices
  • Juice: 250 ml (tomato)
  • Cucumbers: 4 units.

How To Do:

  • Fry two sweet peppers, finely chop the tomatoes, cucumbers and peppers (green and roasted).
  • Leave after a handful of chopped tomatoes, cucumbers, and green peppers are fried, then add the remaining vegetables in a bowl.
  • Squeeze the garlic and season with salt, pepper, add olive oil, tomato juice and chopped everything whisk.
  • Leave in the refrigerator for 30 minutes.
  • Chop the dill, boiled eggs and mix with the remaining vegetables in a bowl.
  • Pour into a bowl. In the middle of the bowl, place a tablespoon of mixed vegetables.
